Let’s Prepare

Wash and dry hands for at least 20 seconds.

Wash and dry produce.

Lay out tools and ingredients on a clean table.

Serves: 4 – 6 

Ingredients

1 cup Frozen peas

1/4 cup Parsley

2 Tbsp Olive oil

2 Tbsp Lemon juice

1/4 tsp Salt

Whole wheat crackers

Instructions

Step 1: Roll and press the lemon with both hands to soften it. Use the

bridge cut to halve the lemon.

Step 2: Squeeze the juice from 1/2 lemon (around 2 tbsp of lemon

juice) into a small bowl or directly into the blender. (Note: Hold the

lemon cut-side-up while squeezing it to prevent seeds from falling into

the blender or bowl.)

Step 3: Pick the parsley leaves off the stems and discard the stems.

Measure and add 1/4 cup of loosely packed parsley leaves to blender.

Measure and add 1 cup of frozen peas, 2 tbsp olive oil, and 1⁄4 tsp salt

to blender.

Step 4: Pulse the blender, stopping and stirring once or twice, until the

ingredients are well combined and the dip is bright green (it will not be

smooth).

Step 5: Add some dip to a cracker and taste together!
