Rainbow Wraps with Peppers

Let’s Prepare

Wash and dry hands for at least 20 seconds.

Wash and dry produce.

Lay out tools and ingredients on a clean table.

Serves: 6

Ingredients

3 bell peppers (red, yellow, and green)

8 oz cream cheese*

6 small tortillas (Note: Choose whole wheat if possible. You can also get large tortillas and cut them in half.)

*Can’t use cream cheese? Try hummus, sunflower, almond butter, or peanut butter instead.

Instructions

Step 1: Shape your non-dominant hand like a bridge over the bell pepper. With your dominant hand, carefully place the nylon knife under the bridge, and use a “low and slow” saw motion. Using the bridge cut, slice the pepper in half, cutting from the top to the bottom. Discard the stem, seed, and membranes.

Step 2: Slice the peppers into ½ inch strips.

Step 3: Repeat with the other peppers.

Step 4: Arrange one tortilla onto a plate. Spread 1-2 tablespoons of cream cheese onto the tortilla.

Step 5: Add a few strips of each color of bell pepper on top of the cream cheese.

Step 6: Roll one side of each tortilla around the vegetables to form a wrap. Enjoy!
