Lovely Lettuce with Lemony Vinaigrette

Let’s Prepare

Wash and dry hands for at least 20 seconds.

Wash and dry produce.

Lay out tools and ingredients on a clean table.

Serves: 4 – 6 

Ingredients

1 head of Lettuce

2 tsp. honey

3 tbsp. olive oil

2 tbsp. lemon juice (1/2 lemon)

1/4 tsp. salt

1/8 tsp. ground black pepper

Instructions

Step 1: Separate the lettuce leaves and rinse in cold water. Pat dry with paper towels. Tear the lettuce into bite sized pieces and set aside.

Step 2: Roll lemon to soften it. Shape your non-dominant hand like a bridge over the lemon. With your dominant hand, carefully place the nylon knife under the bridge, and use a “low and slow” saw motion to halve the lemon.

Step 3: Squeeze juice from half of the lemon into a small bowl. (Note: holding the lemon cut-side-up while squeezing can help prevent seeds from falling into the bowl.)

Step 4: Measure 2 tsp. Honey, ¼ tsp salt, and ⅛ tsp. Black pepper. Add to the bowl.

Step 5: Stir or whisk together all of the ingredients except the olive oil.

Step 6: In a slow stream, pour the 3 tbsp. olive oil into the bowl while whisking vigorously.

Step 7: Dip the leaves into the dressing and enjoy!
