Sassy Slaw with Cabbage

This is not your grandma’s slaw recipe!!  This simple slaw helps children discover the crunch and flavor of the cabbage, with a little taste of honey and lemon.  You can always spice it up with herbs, and more lemon. 

Serves: 4-6, side dish

Time: 10 minutes 

Tools needed: 

  • Lemon squeezer (optional) 

  • Knife  (we like a kid- friendly nylon knife with serrated edge)

  • Mixing spoon 

  • Measuring cup 

  • Measuring spoons 

  • Large bowl 

Ingredients 

  • 6 cups shredded cabbage

  • 2 cups shredded carrots

  • 1 cup raisins (optional) 

  • 4-6 Tbsp lemon juice (juice from 1 lemon)

  • 2 Tbsp olive oil

  • 2 Tbsp honey

  • 1/4 tsp salt

Instructions

  1. Roll the lemon to make it softer.

  2. Cut the lemon in half (use the bridge cut!) 

  3. Squeeze the juice from the lemon into the bowl. Remove any seeds.

  4. Then, add olive oil, honey, and salt to the lemon juice. Stir until the mixture is combined. 

  5. Add the shredded cabbage, carrots and raisins and stir to combine. Wait 5 minutes to let the flavors meld.
