Rainbow Wraps with Peppers

Prep Time: 15 minutes

Tools you will need

  • Plate or large napkin for serving
  • Spoon or spatula (for spreading)
  • Child-safe Knife
  • Cutting mat
  • Napkins

Ingredients

  • 3 bell peppers (red, yellow, and green)
  • 8 oz cream cheese*
  • 6 small tortillas ( Note: Choose whole wheat if possible. You can also get large tortillas and cut them in half.)

*Can’t use cream cheese? Try hummus, sunflower, almond butter, or peanut butter instead.

Steps

  1. Shape your non-dominant hand like a bridge over the bell pepper. With your dominant hand, carefully place the nylon knife under the bridge, and use a “low and slow” saw motion. Using the bridge cut, slice the pepper in half, cutting through the top to the bottom. Discard the stem, seed and membranes.
  2. Slice the peppers into ½ inch strips.
  3. Repeat with the other peppers.
  4. Arrange one tortilla onto a plate. Spread 1-2 tablespoons of cream cheese onto the tortilla.
  5. Add a few strips of each color of bell pepper on top of the cream cheese.
  6. Roll one side of each tortilla around the vegetables to form a wrap.
  7. Enjoy!
